Easy, Cheesy Dutch Oven Potatoes

  • 12” Dutch Oven
  • 1 lb Bacon
  • 1 Yellow Onion, chopped
  • 1 lb or more Medium Cheddar Cheese, grated or cut into small cubes
  • 3 lbs Russet Potatoes, cut into bite sized squares
  • 2 tablespoons Butter (optional)
  • Salt & Pepper or your favorite seasoning


1. Preheat the Dutch Oven Over Charcoal or a Camp Stove

When cooking with charcoal, place charcoal around the bottom of the Dutch oven (approximately 10 briquettes) then cover the lid in the warm charcoal (approximately 14 briquettes). Be ready to adjust for wind and outside temperatures by adding coals as they burn down. Try to keep the briquettes near the outside edge to keep the bottom from burning.

2. Cook the Bacon

Cut bacon into 1 inch pieces and fry in a dutch oven until crisp. Then add the sliced onion and cook with the bacon until the onion is slightly transparent.


3. Add the Potatoes 

Add the sliced potatoes and stir the onions and bacon throughout. Season with salt and pepper or your favorite seasoning. Allow the potatoes to cook until softened (approximately 45 minutes), stirring occasionally to prevent the bottom from overcooking.

4. Say Cheese

Once the potatoes are cooked, remove the Dutch oven from bottom heat and stir in half of your grated or blocked cheese. Add the remaining half of the cheese to the top and put the lid on just long enough for the cheese to melt. If you prefer less cheese, add a little butter to help keep the potatoes moist. 

5. Let’s Eat!

All that’s left is to serve and enjoy! If you like a little kick, try adding green chilies to this ooey-gooey dish.
